Fresh Peas with Mint

A perfect spring recipe to serve at a seasonal meal.

 ½ pound fresh peas, shelled or 1 ¼ cups frozen peas, rinsed to thaw
 1 to 2 tablespoons butter or plant-based butter alternative
 3 scallions, finely chopped
 ½ cup dairy half-and-half cream or plant-based unflavored, non-sweetened alternative
 2 teaspoons finely chopped fresh mint leaves
 ½ teaspoon minced lemon zest
 Salt and freshly ground black pepper
 2 mint leaves, chopped for garnish

In a large pan over medium heat, bring 2 quarts of water to a boil.

Add fresh peas and simmer 2 to 3 minutes until tender. Drain and set aside. If using frozen peas, just rinse and follow directions below.

In a medium saucepan, melt butter over low heat. Increase heat to medium-low and sauté scallions for 3 minutes until soft. Stir in cream, mint, and lemon zest. Bring to low boil, lower heat to low. Add peas and simmer, while stirring, for 2 to 3 minutes. Season with salt and pepper.

Serve garnished with mint leaves.
