This popular Indian street food can be found everywhere in Mumbai. It’s so tasty and easy to make, you won’t need to charter a ticket to India. Delight your family and serve at home. This delicious vegan version was demoed by Vimi Shukla at Veggie Fest 2019.

Ingredients

 2 tablespoons oil
 3 tablespoons butter or vegan substitute, divided
 2 teaspoons cumin seeds
 1 cup finely chopped onion
 2 tablespoons finely chopped ginger
 2 tablespoons finely chopped garlic
 2 cups finely chopped tomatoes
 ½ teaspoon turmeric powder
 2 teaspoons coriander powder
 ½ teaspoon cayenne powder, optional
 2 teaspoons Pav Bhaji Masala, divided (see recipe)
 1 cup finely chopped carrots
 1 cup cooked, chopped green beans
 2 cups finely chopped green pepper
 2 cups grated cauliflower
 1 cup green peas
 1 ½ cups boiled, mashed potatoes
 Salt to taste
 ½ cup chopped cilantro
 ½ cup finely-diced ginger
 ½ cup diced onion
 8 full-sized hamburger buns or 12 slider-sized buns grilled or toasted (pav)
Garnish
 lemon wedges
PAV BHAJI MASALA MIX
 2 whole black cardamom
 1 tablespoon cumin seeds
 1 teaspoon whole black peppercorns
 ½ teaspoon fennel seeds
 3 red chilies
 1-inch piece cinnamon stick
 4 whole cloves
 ½ tablespoon amchur (dry mango powder)

Instructions

Prepare the Pav Bhaji Masala (see recipe).

Heat 2 tablespoons oil and 2 tablespoons butter in a large skillet. Add cumin seeds and chopped onion. When you hear the crackling sound, start stirring. Add ginger and garlic. Continue stirring until all ingredients are browned. Add chopped tomatoes, remaining spices, and 1 teaspoon Pav Bhaji Masala.

Add carrots, green beans, green peppers, grated cauliflower, and green peas. Mix well. Cook for 5 minutes.

Add mashed potatoes (which binds ingredients together) and remaining tablespoon of butter.

Mash mixture using a potato masher. Add 1 cup water. Simmer 10 minutes on low heat, stirring occasionally. Add
remaining teaspoon Pav Bhaji Masala.

Remove from heat. Mix in cilantro, ginger, and onion.

Serve on toasted or grilled pav (bread or hamburger bun). Garnish with lemon wedges.

Dry roast all ingredients in a pan over medium heat for 2 to 3 minutes, stirring occasionally. Grind to a powder and store in a spice jar.
