Pesto & Vegan “Deli Meat” Sandwich

As the weather warms, we look for tasty meals that won’t heat the kitchen. This sandwich is delicious enough to serve with a salad for summer or soup for winter. Perfect for a speedy meal.


 2 slices whole wheat bread, lightly toasted
 Eggless vegan mayonnaise
 Basil pesto, commercial
 2-3 slices of sliced vegan deli “meats”
 Crumbled goat cheese, vegan feta, or sliced vegan smoked gouda
 Avocados, sliced thinly
 Lettuce (baby greens or leaf)
 Preferred sprouts (broccoli, alfalfa, etc.)

Spread vegan mayonnaise lightly on both sides of toasted bread.


Spread pesto over the mayonnaise.


On bottom slice of bread, arrange deli slices first, then top with greens and avocado slices. Add sprouts and sprinkle with your choice of vegan or dairy cheese.


Put sandwich sides together. Smash down, if necessary, to keep all the ingredients together.


Slice in half if desired. Enjoy!
