Tofu And Vegetable Deluxe Recipe
In partnership with Veggie Fest Presents and DuPage County Convention Bureau, Chef Gaetan demonstrates this savory and delicious dish. First presented at Veggie Fest 2013 by Ray Glend, Tofu Vegetable Deluxe is a great introductory recipe to cooking with tofu.

Ingredients

 4 tablespoons olive oil
 1 pound firm tofu, crumbled
 ¼ cup chopped onion
 1 clove garlic, minced
 1 cup chopped broccoli
 1 cup minced cauliflower
 ½ cup chopped red and yellow bell peppers
 2 tablespoons low-sodium soy sauce ( tamari, for gluten-free option)
  teaspoon turmeric powder
  teaspoon smoked paprika
  teaspoon white pepper
 1 tablespoon nutritional yeast flakes
 Salt and black pepper

Instructions

In a large skillet, sauté the onion and garlic in 2 tablespoons of oil for 2 minutes. Add the broccoli, cauliflower and bell peppers. Cook until tender.

Add remaining 2 tablespoons of oil along with the tofu, turmeric, paprika, pepper, yeast flakes, salt and pepper.

Cook until the liquid evaporates, stirring occasionally.
