Tossed Salad With Fruit and Nuts

Spicy arugula combines with apples and pecans.

 8 cups mixed baby lettuce leaves
 2 apples or pears, cored and thinly sliced (apples could be honey crisp or pink lady)
 ½ sweet onion
 ½ cup candied pecans (See Notes)
 ½ cup shredded or crumbled plant cheese, such as feta, mozzarella, Parmesan, blue cheese
Vinaigrette
 ½ cup olive oil
 2 tablespoons apple cider vinegar
 Juice of 1/2 lemon (about 2 tablespoons)
 1 clove garlic, minced
 Salt and pepper to taste

Combine all ingredients in a large salad bowl.

Toss with vinaigrette just before serving.

Combine all ingredients and whisk until well-mixed.

Notes:
You can purchase candied pecans online or in some grocery stores. For a homemade version, try our Candied Pecan recipe.

For a variation, use toasted pecans instead of candied. Add any of the following: pomegranate seeds, halved grapes, dried cherries or cranberries.

If nuts are an allergen, omit the candied pecans or replace them with toasted sunflower seeds.
