Smashed Bean Sandwiches in Pita

Smashed Bean Pita Sandwiches recipe
This creative use for leftover beans results in wholesome, hot sandwiches in just a few minutes.

Ingredients

 1 cup cooked kidney beans or lentils, well drained and mashed
 2 to 3 tablespoons ketchup
 ½ teaspoon curry powder
 2 whole pita breads (see note regarding gluten-free)
 ¼ cup or more finely diced sweet onion
 2 ounces cheddar cheese, sliced or shredded, dairy or nondairy
 Fresh alfalfa or broccoli sprouts
 Tomato slices
 Note: Any gluten-free flat bread or sliced bread can be used.

Instructions

In a small saucepan, heat beans or lentils with ketchup and curry powder until warm.

Smash with a fork.

Preheat toaster oven or conventional oven broiler.

Spread bean mixture on top of pita bread. Sprinkle with onion, then if desired, top with a dairy or vegan cheese to cover. Place under broiler until cheese melts, watching closely.

Remove to serving plates. Pile sprouts on top, add tomato slices, and serve while hot.
