3 Trail Mixes for Hiking or Snacking

Trail Mixes aren’t just for hiking. They make a great after-school snack, an easy-to-prepare party dish, or fun nibbles for movie watching. Get the kids involved and let them make up their own customized mix.

Ingredients

Ingredients for Indian Mixed Nuts
 2 teaspoons refined coconut oil
 ½ cup almonds
 ½ cup cashews
 ½ cup fox nuts (See note below)
 ½ cup peanuts
  cup shelled pistachios
  cup walnuts
 1 teaspoon salt
 1 teaspoon maple syrup
 ¾ teaspoon dried mango powder (See note below)
 ½ teaspoon ground cumin
 ½ teaspoon red chili powder (cayenne-type)
 ¼ teaspoon black pepper
 1 tablespoon dried mint leaves
Ingredients: Trail Mix for Kids
 1 cup pretzels, regular or gluten-free (any shape but stick)
 1 cup dried vegan cereal (any crunchy cereal, such as Cheerios or Chex-type cereals)
 1 cup miniature vegan snack crackers or cookies for kids, such as animal crackers or goldfish
 1 cup honey roasted peanuts, or seed or nuts of your choice
 1 cup vegan hard-shelled chocolate candy, similar to M&M’S
 1 cup raisins (or any dried fruit)

 1 cup raw almonds
 1 cup raw peanuts
 1 cup raw pumpkin seeds
 ½ cup raw walnuts
 2 teaspoons olive oil
 2 teaspoons maple syrup
 1 teaspoon garlic powder
 1 teaspoon (Mexican-style) chili powder
 1 teaspoon dried oregano
 ½ teaspoon salt
 ¼ teaspoon smoked paprika
 ¼ teaspoon cayenne pepper, optional or to taste
 ½ cup dried chopped mangoes
 ½ cup cinnamon chips, optional

Preheat oven to 325° F.

Place all ingredients in a large bowl. Toss thoroughly to combine to ensure all nuts are evenly coated.

Spread on parchment-lined baking sheet in a single layer.

Bake for 15 minutes, tossing them halfway. They should be golden brown when done.

Cool completely.

Store in an air-tight container.

Note: Add any kind of nuts or seeds of your choice. Adjust the red chili powder depending on your preference.

A very nutritious snack, fox nuts are available in any Indian grocery store or online at Amazon. They are also called “phool makhana.” When baked, they become crisp like chips. Mango Powder is also available in Indian grocery stores or online.

Makes about 2 2/3 cups

Assemble all ingredients.

Gently mix to combine. Store in an air-tight container.

Makes about 6 cups Trail Mix

Notes:
The ingredients for the Trail Mix for Kids are suggestions. You could use any nuts (toasted or raw), seeds, or dried fruits, even coconut shreds. You could use any small snack cracker or cookie. Any hard-shelled chocolate candy or even chocolate chips could be used. Put the ingredients out on a table and let your little ones customize their own mixes. Bag them up and they are ready any time you need a quick snack.

Place all ingredients, except mangoes, in a large bowl. Toss thoroughly to combine, making sure all of the nuts are coated evenly.

Spread on a parchment-lined baking sheet in a single layer.

Bake for 20 minutes, tossing nuts after 10 minutes.

After 15 minutes, check every few minutes to make sure the nuts are not burning. They should be a golden brown when they are finished roasting.

Cool completely. Stir in dried, chopped mangoes and cinnamon chips, if using.
