Ingredients
 2 cups flour (can use 1 cup whole wheat)
 1 cup sugar
 3 teaspoons baking powder
 1 teaspoon salt
 ⅓ cup butter or vegan buttery sticks, softened (Do not use vegan spread in a tub.)
 1 cup milk, dairy or plant
 2  ¼ teaspoons powdered vegan egg replacer (Available in natural food grocers and online)
 3 tablespoons warm water
Streusel Ingredients
 ½ cup (113 g) chopped walnuts
 ⅓ cup (76 g) packed brown sugar
 ¼ cup (57 g) flour
 ½ teaspoon (2 g) ground cinnamon
 3 tablespoons (43 g) vegan buttery sticks, softened but still firm
Apple Variation
 ¼ cup (57 g) butter
 ½ cup (113 g) packed brown sugar
 2  medium apples, thinly sliced
Directions

Heat oven to 350° F.

Mix streusel until crumbly.

Beat remaining ingredients in large mixing bowl for about 2 minutes, scraping bowl
occasionally.

Spread half of batter in a greased 9×9 inch pan.

Sprinkle with half of streusel mix.

Repeat layers with remaining batter and streusel.

Bake until wooden toothpick inserted into center comes out clean, about 35-40 minutes.
Apple Variation

In heated oven, melt butter in pan.

Sprinkle with brown sugar.

Arrange apples in pan.

Pour all of batter in pan and top with streusel and bake as above.
