Place chickpeas and tahini in a food processor. Pulse until smooth. Add 3 tablespoons lemon juice, garlic, salt, and pepper. Pulse until smooth and creamy. Taste and add more lemon juice, if desired.
Place hummus in a serving bowl and garnish with chopped tomato and a drizzle of olive oil.
Serve with pita bread or assorted cut vegetables.
