Scary Green Smoothies With Lychee Eyeballs

Scary, healthy, and delicious! Perfect for Halloween or any other time you want a tasty snack.

Ingredients

Smoothie Ingredients
 4 frozen bananas
 2 small ripe avocados (or 1 large)
 4 large handfuls of spinach
 2 scoops vegan vanilla or unflavored protein powder
 4 cups milk, plant-based (unsweetened and unflavored) or dairy 
 4 tablespoons raw sunflower seeds (optional)
 2 cups pineapple or cut mango or another banana
 1 recipe Lychee Eyeballs
Lychee Eyeball Ingredients
 8 seedless lychees from 1 can
 2 tablespoons raspberry jam
 8 frozen blueberries
 4 toothpicks

Instructions

1

Divide smoothie ingredients in half. Mix each batch in a high-speed blender until rich and creamy.

Adjust consistency by adding more milk, fruit, or ice as needed.

Lychee Eyeball Instructions

Gently pat lychees dry with a paper towel.

4

Fill the holes with raspberry jam.

Place the blueberries in the jam-filled hole.

Create blood-like streaks with the jam by following natural cracks of the lychee.

7

Insert 2 eyeballs on each toothpick and balance across the rim of each glass filled with yummy green smoothie (see picture).

Serves 4 witches, goblins, or ghouls.
