Tabouli Salad
Unquestionably, this is the most popular salad that the Lebanese have shared with the West!
Ingredients
1 ½ cups uncooked fine bulgur
1 ½ cups boiling water
2 cups chopped fresh parsley
1 bunch scallions, finely chopped
1 large tomato, chopped
3 tablespoons olive oil
3 tablespoons lemon juice
1 tablespoon crumbled dry mint or 6 tablespoons chopped fresh
1 teaspoon salt
1 garlic clove, minced or ¼ teaspoon powder (optional)
Freshly ground black pepper to taste
Instructions

Pour boiling water over bulgur in a large bowl. Stir well, then let stand 1 hour. Drain bulgur in a fine colander and return to bowl.

Add all other ingredients. Toss well.

Cover and chill at least 2 hours before serving.
Serves 6
