In a food processor, combine almonds, nibs, dates, 2 tablespoons coconut, vanilla, cinnamon, cardamom, and salt. Process until almonds are finely ground (not into powder). Add orange juice and maple syrup, process until mixture balls up.
Use hand to form into bite-size balls.
Place remaining shredded coconut in a bowl and mix in grated orange rind. Roll the balls in shredded coconut mixture.
Store in a covered glass container in fridge.
