A tender, crisp, buttery cookie that melts in your mouth. No eggs required in this recipe so it is natural for vegetarians. Be creative and decorate to your heart’s content!

Ingredients

1 cup vegan butter, room temperature
 1 cup confectioner’s sugar
 1 teaspoon vanilla
 2-1/2 cups flour
 1 tablespoon plant milk

Instructions

1

Preheat oven to 325°F.

2

Using an electric mixer on medium speed, blend butter, sugar and vanilla until fluffy.

3

Mix in flour and milk.

4

If too dry, add 1 teaspoon of milk at a time. Dough should hold together but be soft and pliable like pie crust.

5

Knead on a lightly floured board; careful not to use too much flour or it will be too stiff.

6

Roll dough out on board and cut out shapes with cookie cutters.

7

Place cookie cutouts on ungreased cookie sheet and bake for 15-18 minutes. Only cookie edges should look slightly brown; not all browned. Will crisp up when out of oven.

8

Cool on wire cookie racks.

9

Frost and decorate as desired.

Note: Don’t limit yourself to Christmas cookies. These cookies can be made for any holiday that has a cookie-cutter: Valentine’s Day, Easter, Halloween, etc.
