Dark Chocolate Mousse

Rich, velvety smooth decadence. Elegant enough to serve to party guests, easy enough for a family dinner.

Ingredients

 1 cup aquafaba (liquid from 1-2 15oz canned chickpeas)
 1 cup dark chocolate
 1 teaspoon instant coffee
 2 tablespoons plant-based milk
 1 tablespoon coconut or white sugar
 ½ teaspoon vanilla extract
Garnish options
 Shredded chocolate
 Lemon or orange zest
 Fresh berries
 Roasted diced hazelnuts
 Pomegranate seeds
 Mint leaves

Instructions

Whisk aquafaba in a large bowl with an electric mixer with a whisk attachment until frothy, about 8 to 10 mins.

In a microwave-safe bowl (if microwaving) or in a double boiler, place chocolate, milk, instant coffee, and sugar to melt. To avoid burning, set the microwave for 30 seconds. Stir and add more time (10-second intervals) if needed.

Lightly cool the chocolate, and add in whipped aquafaba. Don’t over mix.

Spoon into your choice of serving bowls. Refrigerate for a few hours or overnight.

Serve with your choice of garnish.
