6 medium-sized or 4 large beets, cooked and cooled
3 tablespoons fresh lemon juice
1 teaspoon whole cumin seed
Salt and pepper to taste
Peel and slice cooked beets. Place beets in a wide bowl.
Combine lemon juice, cumin seed, salt, and pepper in a small bowl. Pour over beets and toss gently.
Serve cold on a bed of lettuce leaves.
