Dark Chocolate Mousse

Rich, velvety smooth decadence. Elegant enough to serve to party guests, easy enough for a family dinner.

Ingredients

 1 cup (236.59 ml) aquafaba (liquid from 1-15.5oz can of chickpeas)
 1 cup (226.8 g) vegan dark chocolate
 1 teaspoon (4.8 g) instant coffee
 2 tablespoons (29.6 ml) plant-based milk
 1 tablespoon (14.3 g) coconut or white sugar
 ½ teaspoon (2.5 ml) vanilla extract
Garnish options
 Coconut whipped cream
 shredded chocolate
 lemon or orange zest
 fresh berries
 roasted diced hazelnuts
 pomegranate seeds
 mint leaves

Instructions

Whisk aquafaba in a large bowl with an electric mixer with a whisk attachment until frothy, about 8 to 10 mins.

In another microwave-safe bowl (if microwaving), place vegan chocolate, plant-based milk, instant coffee, and sugar. Melt in a double boiler or microwave checking every 20 seconds.

Once the chocolate is slightly room temperature add in aquafaba and mix lightly. Don’t over mix.

Refrigerate it for a few hours or overnight.

Serve with your choice of garnish.
