Cherry Macadamia Nut Cookies

A traditional butter shortbread cookie studded with nuts and fruit, flavored with almond extract. Melt in your mouth sweet goodness!

Ingredients

 1 cup (226.8 g) butter or vegan buttery sticks
 6 tablespoons (56.7 g) powdered sugar + extra for rolling
 1 teaspoon (4.93 ml) almond extract
 2 cups (453.6 g) sifted flour
 ¾ cup (170 g) chopped macadamia nuts
 ½ cup (113.4 g) chopped dried cherries

Instructions

Preheat the oven to 350°F (180°C).

Beat the butter and the sugar together until light and fluffy.

Add the almond extract and mix

Add the flour and mix well.

Fold in the nuts and cherries

Roll in balls and flatten. Place on parchment paper-lined baking sheet.

Sieve powdered sugar over the cookies while still warm and again when they cool.

Bake for 15-18 minutes (until golden color)

Store in a covered container.

Makes about 14-16 cookies, depending on size of cookie

Note: You can also make these cookies as small bite-sized balls. Just roll the dough into balls and bake until golden. While still warm, roll the balls in powdered sugar. Store in a covered container. When ready to serve, roll again in powdered sugar for a sweet and pretty presentation.
