Ingredients
2 ½ cups old-fashioned rolled oats
¼ cup cashews
¼ cup pecans
½ cup pumpkin seeds
¾ cup shredded coconut
¾ teaspoon cinnamon
½ cup maple syrup
¼ cup refined coconut oil, melted
1 teaspoon vanilla extract
½ teaspoon salt
2 tablespoons chia seeds
½ cup chopped dried mango

Preheat oven to 350°F.

Mix together uncooked old-fashioned rolled oats, nuts and seeds (except chia), coconut, and cinnamon.

Add maple syrup, coconut oil, vanilla extract, and salt.

Spread the mixture evenly on a baking sheet lined with a silicone mat or parchment paper.

Bake for 25-30 minutes, stirring halfway, until the top is golden brown.

Let cool completely. Stir in chia seeds and dried mango, and store in a tightly sealed container

Enjoy with plant-based-milk, yogurt, or on smoothie bowls.

Note:
For different varieties, you can experiment with different nuts, seeds, and dried fruits. Walnuts or almonds can be used. Sunflower seeds would be tasty. Any dried fruit like raisins, cherries, cranberries, or blueberries will work.
