Swiss Muesli

This elegant muesli gets the day off to a healthful and delicious start. In Europe, it is often served for brunch or as a light evening meal.

Ingredients

 1 cup uncooked, old-fashioned rolled oats
 1 cup warm water
 6 medium-sized apples
 2 tablespoons lemon juice
 1 cup fresh berries
 1 cup seedless green grapes, halved
 ¼ cup chopped nuts
 3 tablespoons honey or maple syrup
 ½ cup dairy or nondairy yogurt, flavored or unflavored
Note
 For a gluten-free option, use Certified Gluten- free Oats.

Instructions

Soak oats in 1 cup warm water for 30 minutes to soften. Drain well.

Grate apples, then toss with lemon juice in a medium-sized bowl to help prevent discoloration. Add soaked oats, berries, grapes, and nuts.

Stir honey and yogurt together and add to oats, tossing lightly. Refrigerate several hours or overnight.

Serve with fruit and additional yogurt or cream.
