French Toast

French-Toast
A festive, easy, vegan meal for breakfast or brunch! Top with maple syrup and fresh fruit. For added protein, serve this French Toast with scrambled tofu or veggie sausage on the side. This recipe was demoed by Markus Schramm of Manna Organics at Veggie Fest 2015.

Ingredients

 1 loaf Cinnamon Date Manna Bread
 1-2 tablespoons organic flour (spelt is great)
 2 cups organic vanilla soy milk (unsweetened)
 3 teaspoons sugar
 1 teaspoon organic vanilla extract
 Dash organic ground cinnamon and organic ground nutmeg
 Pinch of salt
 2 tablespoons coconut oil
 Powdered organic sugar
Topping Suggestion
 Fresh Fruit, such as berries and bananas
 Maple syrup

Instructions

Slice Manna Bread into 1” slices.

Whisk together flour, soy milk, sugar, vanilla, cinnamon, nutmeg, and salt in a mixing bowl until smooth. This will form a thin batter for coating the bread.

Heat large skillet over medium-high heat. When hot, add the coconut oil to the heated skillet.

Dip the Manna Bread in the batter and fry each side until golden brown. Add more coconut oil as needed to fry the bread.

When the bread is crispy, remove from the pan and drain on paper towels.

Sprinkle bread with vegan powdered sugar (optional).

Top with your favorite pancake toppings and/or fresh fruit and berries.
