Mango Coconut Overnight Oats
Mangos and coconuts are sunshine fruits and make us think of beaches, palm trees, and cabanas. Start your day with this exotic recipe that’s easy to make and guaranteed to bring you that island feeling.
Ingredients
½ cup old-fashioned oats
¾ cup plant-based milk, whichever type you prefer
1 teaspoon pure maple syrup
¼ teaspoon pure vanilla extract
2 tablespoons shredded coconut
Topping:
mango and shredded coconut
Note:
Add toppings mentioned fresh in the morning, along with more plant-based milk and/or sweetener if desired.
The oats can be stored 3 to 4 days in refrigerator.
Instructions

Combine oats, plant-based milk, maple syrup, vanilla, and shredded coconut in a mason jar or bowl. Cover it with a lid and shake to mix.

Refrigerate oats 6 to 8 hours before eating.

Top with fresh mango and shredded coconut before serving.
