Scandinavian Fruit Slaw

Delicious fruits, cabbage, and nuts (or seeds) are combined in a wonderful yogurt dressing. To make oil-free, eliminate the eggless mayonnaise.

Ingredients

 2 large apples, chopped (peel, if desired)
 2 large oranges, peeled and cut into bite-sized sections
 2 cups seedless red or green grapes, halved
 3 ½ cups cabbage, shredded
 1 cup chopped walnuts (or any nut or seed of your choice)
 ¼ cup dried cherries, chopped
Dressing Ingredients
 ½ cup eggless mayonnaise (or use ½ cup silken to reduce fat)
 1 (6-ounce) plant-based or dairy unflavored yogurt
 3 tablespoons freshly squeezed orange juice
 2 tablespoons freshly squeezed lemon juice
 2 tablespoons maple syrup, or to taste
 ½ teaspoon ground coriander or ground nutmeg, or to taste

Instructions

Toss salad ingredients in a large bowl.

In a small bowl, combine the dressing ingredients. Taste and adjust flavors. If too tart, add more maple syrup. If too sweet, add more lemon juice.

Pour the dressing over the salad and toss gently.

Serve chilled or at room temperature. Best eaten the same day but could be refrigerated to be eaten the next day.

Serves 6
Notes: You could use other fruits that are in season. In the summer, consider peaches or nectarines with strawberries and blueberries. In place of the dried cherries, you could use dried raisins or currents.
