Quiche (veganized)

This fabulous Veggie Fest Presents! recipe comes from Jill Keb, the Vegan Gal, who demoed it on Saturday, January 25th, 2020 at the Science of Spirituality International Meditation Center in Lisle, Illinois. It's great for appetizers, as a side-dish, or served at brunch. Get creative and add a slice of vegan "ham" to create your own plant-based version of "Quiche Lorraine."

Ingredients

  cup garbanzo bean flour
 ½ teaspoon baking powder
 ½ teaspoon onion powder
 ½ teaspoon salt
 2 teaspoons nutritional yeast flakes
 1 cup water
 Handful chopped veggies of choice or broccoli slaw
Garnish
 paprika, black pepper

Instructions

Preheat oven to 400° F (204.4° C).

In a medium bowl, combine flour, baking powder, onion powder, salt, nutritional yeast, and water. Whisk until smooth. Fold in chopped veggies. Pour into paper-lined muffin pan, ramekins, or oiled loaf pan.

Sprinkle with paprika, black pepper, and/or top with 1 tablespoon vegan cheese sauce (link provided in the directions). Bake 20 to 30 minutes. until slightly puffed up and lightly browned.

Serve warm. Great for lunches, snacks, on the go. Enjoy multiple variations!
