Ingredients
2 tablespoons plant-based butter
1 large onion, chopped
2 large Granny Smith (or any tart cooking) apples, cubed or sliced
½ cup maple syrup (or brown sugar)
1 (48-ounce) jar or cans of Great Northern Beans (not drained)
½ cup ketchup
2 teaspoons ground cinnamon
1 tablespoon molasses
1 tablespoon prepared yellow mustard
Salt to taste (can omit as the beans and ketchup are highly salted)
Directions

In a large skillet over low heat, melt the butter.

Add the chopped onions and cook until soft.

Add the apples and cook until tender.

Add the maple syrup or brown sugar. If using sugar, stir and cook until melted.

Add the beans, ketchup, cinnamon, molasses, mustard, and salt (if using).

Mix well and pour into a casserole oven-safe dish.

Bake at 400°F for an hour.
