Banana Peanut Butter with Blueberries
 1 rice cake, brown or white
 1 tablespoon creamy peanut butter or any nut or seed butter of choice
 Several banana slices
 Several blueberries
Chocolate Hazelnut Spread with Strawberries, Chocolate Sauce and Pumpkin Seeds
 1 rice cake, brown or white
 2 strawberries, sliced
 1 teaspoon pumpkin seeds
 ¼ cup chocolate chips, melted
Rice Cake with Mango Salsa
 1 rice cake, brown or white
 2 tablespoons mango salsa
 1 teaspoon maple syrup or agave (optional)
Savory
Avocado Toast with Sautéed kale
 1 rice cake, brown or white
 ½ small avocado, sliced or mashed
 1 teaspoon lemon juice
 ½ teaspoon vegetable oil
 1 clove garlic, minced
 ½ cup kale
 Salt and pepper to taste, divided
Garnish
 Sunflower seeds
 Hot sauce or chilli flakes
Pesto Sauce with Cherry Tomatoes
 1 rice cake, brown or white
 A few microgreens
 2 cherry tomatoes
 ¼ teaspoon Everything seasoning
Bruschetta with Balsamic or Lemon
 2 tablespoons chopped tomatoes
 ¼ teaspoon garlic clove crushed
 A few basil leaves chopped
 Salt to taste
 1 rice cake, brown or white
Garnish
 Drizzle balsamic vinegar or lemon juice

Instructions

Sweet
Banana Peanut Butter with Blueberries

On the rice cake, spread the butter and place the banana slices and blueberries to form a bear as shown in the picture.

Chocolate Hazelnut Spread with Strawberries, Chocolate Sauce and Pumpkin Seeds

On the rice cake, spread the hazelnut chocolate butter, sliced strawberries. Sprinkle with pumpkin seeds and drizzle the melted chocolate on the top.

Variation: On the rice cake, spread the hazelnut chocolate butter, 3 sliced bananas with 4 chopped pistachios, and 2 crushed raspberries.

Rice Cake with Mango Salsa

On the rice cake, top with the mango salsa, and drizzle with maple syrup if desired.

Savory
Avocado Toast with Sautéed kale

In a small bowl, slice an avocado (or mash), and season it with lemon, salt and pepper. Toss gently, and set aside.

In a small pan, add oil. Once it is warm, add the garlic, and sauté for a few seconds. Add kale and let it cook for 2 minutes or until tender. Season with salt and pepper to taste.

To assemble: On the rice cake, spread the sliced or mashed avocado and top with the sautéed kale. Sprinkle with sunflower seeds and drizzle with hot sauce if desired.

Pesto Sauce with Cherry Tomatoes

On the rice cake, apply the pesto and top with micro greens and cherry tomatoes. Garnish with Everything seasoning.

Note
Everything (but the bagel) seasoning is available in many stores. It is the combination of herbs and spices like you’d find on an everything bagel.

Chop the tomatoes. Add the garlic, basil leaves, and salt. Spread the hummus on the rice cake and top it with the tomato mixture. Drizzle with balsamic vinegar or lemon juice.
