Speedy Steel-cut Oats Plus

Healthy oats and fruit made easy with an Instant Pot

Ingredients

 1 cup steel-cut oats
 ½ cup amaranth
 2 tablespoons goji berries
 2 tablespoons currants
 4 cups water
 1 apple, optional (If non-organic, peel the skin.)
 1-2 tablespoon maple syrup
Garnishes
 Ground cinnamon, to taste
 Ground flax
 Hemp seeds
 Plant milk

Instructions

Place oats, amaranth, goji berries, currants, water, and chopped apple (if using) in the Instant Pot.

Set at high pressure 10 minutes. Allow the pressure to release naturally.

Serve with maple syrup and any other garnishes.

Serves: 6

Note:
This recipe must be made with steel-cut oats, not rolled oats or even quick cooking steel-cut oats.

Steel-cut oats have the same nutrients and fiber that any oat product does. However, because they are less processed and made with more water, you can eat a smaller portion, thereby consuming fewer calories. Because they are less processed, they take longer to digest, which is better for blood sugar levels and a feeling of fullness for a longer period of time.

Amaranth and goji berries are high protein, nutritionally rich super foods.

If you must be gluten-free, look for certified gluten-free steel-cut oats.
