Xigua Popsicles

Instructions
Cut your watermelon into wedges.
Slice into 1” thick triangles, leaving the rind on the slices.
Cut a small slit in the green rind, about the size of a popsicle stick.
Slide the stick into the slit.
Lay your “popsicles” on a parchment-lined baking sheet. Continue to layer the popsicles between parchment paper until all of the watermelon popsicle slices are on the baking sheet.
Place in your freezer. Serve when frozen.
Note: You can also make popsicles using other melons, like honeydew and cantaloupe.
